Being at home with the kids for months has had it's moments but one thing seems to bring us together, COOKING!!
I wanted to share one of our favorite recipes, we have perfected it through trial and error and our excited to share it with all of you. My daughters are gluten-free so with this recipe you can use regular flour or substitute your favorite gluten-free flour if needed.

Makes one 9x5 loaf
Ingredients
2 cups Flour ( I use all purpose gluten free flour)
1 tsp baking soda
1/8 tsp salt
1/2 cup canola oil
3/4 cup sugar
1/4 cup brown sugar, packed
2 large eggs
3 bananas, mashed
1/2 tsp gluten-free vanilla
1/2 cup coarsely chopped walnuts (optional)
Directions
- Heat oven to 325° F. Lightly spray 9x5 loaf pan with non-stick spray.
- In a medium size bowl, sift together the Perfect Flour, baking soda and salt. Set aside. In a large mixing bowl mix together the canola oil and sugars. Add eggs, mashed bananas and vanilla, stirring until well blended. Fold in the dry ingredients and walnuts (if using.)
- Pour batter into prepared 9x5 loaf pan and bake for approximately 65-75 minutes or until toothpick inserted in center comes out clean. Transfer loaf to wire cooling rack to cool before serving.
