Homemade Banana Bread

Being at home with the kids for months has had it's moments but one thing seems to bring us together, COOKING!! 

I wanted to share one of our favorite recipes, we have perfected it through trial and error and our excited to share it with all of you.  My daughters are gluten-free so with this recipe you can use regular flour or substitute your favorite gluten-free flour if needed.

Makes one 9x5 loaf

Ingredients

2 cups Flour ( I use all purpose gluten free flour)
1 tsp baking soda
1/8 tsp salt
1/2 cup canola oil
3/4 cup sugar
1/4 cup brown sugar, packed
2 large eggs
3 bananas, mashed
1/2 tsp gluten-free vanilla
1/2 cup coarsely chopped walnuts (optional)

Directions

  1. Heat oven to 325° F. Lightly spray 9x5 loaf pan with non-stick spray.
  2. In a medium size bowl, sift together the Perfect Flour, baking soda and salt. Set aside. In a large mixing bowl mix together the canola oil and sugars. Add eggs, mashed bananas and vanilla, stirring until well blended. Fold in the dry ingredients and walnuts (if using.)
  3. Pour batter into prepared 9x5 loaf pan and bake for approximately 65-75 minutes or until toothpick inserted in center comes out clean. Transfer loaf to wire cooling rack to cool before serving.
